Ingredients
- 8 lbs. Two-row Pilsner Malt
- 1 lb. Dark Munich Malt (9 ºL)
- 0.5 lb. Carapils Malt (1.7 ºL)
- 1 oz. Hallertau hop pellets (60 min.) Bittering
- 0.5 oz. Saaz hop pellets (40 min.) Flavor/Bittering
- 0.5 oz. Saaz hop pellets (20 min.) Flavor
- 0.25 oz. Saaz hop pellets (Flame Out) Aroma
- Wyeast 2278 (Czech Pils)
Additional Information
This is a step mash (single infusion at 149 °F -152 °F will still work). Hold the mash at 122 °F for 30 minutes then raise temp to 149 °F -152 °F for another 30 minutes or until conversion is complete.
Chill beer to 45º and pitch yeast starter. Hold temp for 14 days then rack to secondary or keg and slowly lower the temperature to as cold as possible without freezing. Hold this temp for 60 days.
